Happy St. Patty’s Day
“You can take a man out of Ireland, but you can’t take out the Irishness of the man.”
Scott’s family is Scotch-Irish, so I love making this a fun day for him to celebrate his heritage and of course it’s always fun to celebrate holidays. On St. Patrick’s Day we will have corned beef and clover ravioli, thanks to Costco.
Growing up, my mom would make corned beef stew, serve even more green vegetables and would die our milk green…I’ve recently learned that my mom wasn’t the only one who did that. My mom would and still does things to make holidays extra special.
While I was home a few weeks ago, my mom had a meeting and wanted to put little goody baskets together for everyone coming. Of course, she had found some perfect little things to put together into a fun and festive St. Patrick’s Day basket. To finish off the basket, we made a special green popcorn…it’s a sweet sticky sauce that makes the most delicious sweet popcorn.
“Green Popcorn” Recipe:
- 1 lb. butter
- 2 cups sugar
- 1/2 cup Karo syrup
- 1/2 cup water
Cook over medium heat, stirring constantly, until soft ball forms (in water). Then, pour over popcorn and let cool, spread out on wax paper.
